Choosing your vegetables

To make veggie chips, you have to be careful when choosing vegetables. All types of vegetables are not suitable for making chips. Carrots, rutabagas, turnips and parsnips are some good choices. Before you figure out how to make veggie chips in a dehydrator, you must choose the right vegetables.

If you cut these vegetables into thin slices, the slices will be consistent. Another thing about these vegetables is that they have a firm texture, which is a necessity for making veggie chips.

Wash your hands and use sanitized utensils. Before washing the vegetables, if necessary, peel them. When cutting them, make uniform slices. Make the slices thin. You can easily make the slices consistent if you use a mandolin slicer.

But this fancy slicer is not a necessity. You can use a vegetable peeler or just a sharp knife. Remove the skin carefully and cut the vegetables into thin slices. Why thin slices? The reason is simple: the thinner the slices, the crispier the chips will be.

Blanching and antioxidants

Two things can be done to improve the quality of your vegetables before you dry them. Here is the first method. Soak your vegetables in ascorbic acid or lemon juice. It will prevent oxidation. The second method is to blanch them in boiling water.

Keep them in hot water for a couple of minutes. It will kill bacteria and other pathogens in your vegetables, making them suitable for making chips. Do not skip this part if you really want to know how to make veggie chips in a dehydrator.

Now let us learn how to make different types of veggie chips.

Carrot chips

  • 1 pound dinosaur kale
  • Granulated sugar (1/2 teaspoon)
  • 3/4 teaspoon kosher salt
  • olive oil (3 teaspoons)
  • Togarashi powder (1/4 teaspoon)

Set the temperature of the oven at 350°F. In the middle, arrange a rack. Coat baking sheet (you can use a pastry brush to do that). Mix the three ingredients: sugar, salt and Togarashi. Now prepare the kale by removing the stalks and center ribs. Dry the kale leaves after washing them thoroughly.

Coat the leaves with oil. Sprinkle the Togarashi mixture on the leaves. Place the leaves on the baking sheet and make sure they form an even layer. Keep heating, and kale chips will become crisp in just 10 minutes. Let them cool for 3-5 minutes. Serve the chips immediately or store them for the future.

Things you will need

Blanching process is the next step. Take some water in a pot and place the pot on a stove. Blanch the potatoes in the hot water for a couple of minutes. Then take the potatoes out of the water and let them cool. Before you dehydrate the slices, air dry them. You can also use a kitchen towel to dry the slices.

Place the slices on the dehydrator trays uniformly. Setting the temperature of your food dehydrator is an important part of the process. The ideal temperature is 135 degrees Fahrenheit. You may need to dehydrate the potatoes for up to 10 hours.
